Cookery School


Our cookery school welcomes you in the sweet Sabina countryside, surrounded by hundreds of olive trees.

 

In a professionally equipped kitchen you will learn and prepare dishes in the Italian tradition: theoretical and practical courses on Italian regional cookery specialties held by Paola in English and French; a full immersion in different flavours and tastes in the glorious frame of the Sabina hills.


Our menus reflect the tradition of Italian regional cookery, and are inspired by the seasons.

   

In the preparation of our dishes we use natural ingredients grown in our own biological cultivation.

Also the Sabina extra virgin olive oil is made from olives that come from our olive trees.

The courses take place daily and last 4 hours each.

Menu PRIMAVERA - 4 hours

Level: Medium

  • Aubergine and squash patty-cake with ricotta cheese

  • Noodles with ragù sauce

  • Lemon scallops

  • A glass of 'zuppa inglese' with strawberries

 

Menu GHIOTTO - 4 hours
Level: Easy

  • Dried-beef roulade with tuna/ham mousse on a bed of salad

  • Pasta 'amatriciana' style

  • Chicken with peppers

  • ricotta cheese-cake with chocolate sauce

 

Menu GOURMET - 8 hours
Level: Advanced

  • Risotto with shrimps and squash

  • Tuna calf

  • Fruit salad

  • Fruit pie

 

La PIZZA - 4 hours + leavening
Level: Medium

The course revolves around the preparation of the base paste and the baking in a firewood furnace.

  • Rosemary 'focaccia'

  • Pizza 'alla marinara'

  • Pizza 'Margherita'

  • Pizza with squash

  • Pizza with ham and mushrooms

  • Pizza 'capricciosa'

  • Pizza 'alla parmigiana'

 

Il Grande Fritto Italiano - 4 hours
Level: Medium

  • Pasta with pesto

  • Fried seafood

  • Green salad

  • Fruit spits with chocolate topping

 

We hold thematic courses for a minimum of 5 students.
